Quick Jambalaya
This version of jambalaya stands out with the addition of Old Bay Seasoning, creating a distinct and tasty dish. It combines chicken, kielbasa sausage, and vegetables with rice in a single pan for minimal washing up. The method is straightforward, resulting in a complete meal in just 55 minutes. It's a hearty and satisfying recipe perfect for a weeknight dinner.
Ingredients
- 1/4 cup extra virgin olive oil
- 1 lb boneless skinless chicken breast (cut into 3/4 in chunks)
- salt (to taste)
- pepper (to taste)
- 3 stalks celery (diced)
- 1 medium onion (chopped)
- 1 green pepper (chopped)
- 1 lb kielbasa-type sausage (cut into 1/2in chunks)
- 2 garlic cloves (minced)
- 2 cups chicken broth
- 3/4 teaspoon Old Bay Seasoning
- 1 (14 ounce) can crushed tomatoes with juice
- 1 cup long grain rice
Method
- Warm the olive oil in a large frying pan.
- Cook the chicken pieces until they are browned all over.
- Place the diced celery, chopped onion, green pepper, sausage chunks and minced garlic into the pan. Continue cooking until the vegetables have softened slightly but still retain some bite.
- Pour in the crushed tomatoes with their juice, the chicken broth, half a cup of water and the Old Bay Seasoning. Allow the mixture to come up to a rolling boil.
- Mix in the long grain rice and turn the heat down low. Let it bubble gently for 5 minutes.
- Put a lid on the pan and take it off the heat source.
- Leave the covered pan undisturbed for about 30 to 35 minutes, or until the rice is cooked through and has absorbed all the liquid.
- Taste the finished dish and add salt and pepper as you like.
