Quick Jambalaya

Ingredients

  • 1/4 cup extra virgin olive oil
  • 1 lb boneless skinless chicken breast (cut into 3/4 in chunks)
  • salt (to taste)
  • pepper (to taste)
  • 3 stalks celery (diced)
  • 1 medium onion (chopped)
  • 1 green pepper (chopped)
  • 1 lb kielbasa-type sausage (cut into 1/2in chunks)
  • 2 garlic cloves (minced)
  • 2 cups chicken broth
  • 3/4 teaspoon Old Bay Seasoning
  • 1 (14 ounce) can crushed tomatoes with juice
  • 1 cup long grain rice

Method

  1. Warm the olive oil in a large frying pan.
  2. Cook the chicken pieces until they are browned all over.
  3. Place the diced celery, chopped onion, green pepper, sausage chunks and minced garlic into the pan. Continue cooking until the vegetables have softened slightly but still retain some bite.
  4. Pour in the crushed tomatoes with their juice, the chicken broth, half a cup of water and the Old Bay Seasoning. Allow the mixture to come up to a rolling boil.
  5. Mix in the long grain rice and turn the heat down low. Let it bubble gently for 5 minutes.
  6. Put a lid on the pan and take it off the heat source.
  7. Leave the covered pan undisturbed for about 30 to 35 minutes, or until the rice is cooked through and has absorbed all the liquid.
  8. Taste the finished dish and add salt and pepper as you like.
