30-Minute Chicken Tagine
This speedy version of a classic Moroccan tagine delivers a rich stew in just 30 minutes. Boneless chicken thighs are first microwaved, then simmered in a fragrant sauce with onion, garam masala, tomatoes, dried apricots, and chickpeas. Finished with fresh cilantro, it creates a delightful balance of sweet and savoury flavours. Ideal for a fast weeknight meal, serve it over a bed of fluffy couscous or rice for a complete dinner.
Ingredients
- 2 lbs boneless skinless chicken thighs
- salt & fresh ground pepper
- 2 tablespoons vegetable oil
- 1 onion, minced
- 2 teaspoons garam masala
- 4 garlic cloves, minced
- 2 tablespoons unbleached all-purpose flour
- 1 cup low sodium chicken broth
- 1 (14 1/2 ounce) can diced tomatoes
- 1/2 cup dried apricot, quartered
- 1 (15 ounce) can chickpeas, rinsed
- 2 tablespoons minced fresh cilantro
Method
- Season the chicken thighs with salt and pepper and place them in one layer in a dish safe for the microwave. Cover the dish tightly with plastic wrap and microwave using 50 percent power for 15 minutes.
- As the chicken cooks, pour the vegetable oil into a large Dutch oven and heat it until it shimmers. Add the minced onion, garam masala, and 1/4 teaspoon salt, cooking until the onion softens for about 5 minutes. Mix in the minced garlic and cook for 30 seconds until fragrant.
- Add the flour to the pot and cook for about 1 minute until it browns lightly. Gradually pour in the chicken broth while scraping the bottom of the pot. Stir in the diced tomatoes, quartered apricots, and rinsed chickpeas. Bring the mixture to a simmer and cook for about 5 minutes until the apricots start to soften.
- Lower the heat and add the microwaved chicken along with any juices from the dish. Cover the pot and continue cooking for about 10 minutes until the chicken becomes tender.
- Mix the minced cilantro into the tagine. Taste and adjust the seasoning with salt and pepper as desired before serving.
