Carrot and Raisin Salad Moroccan Style

Baby carrots are cooked until crisp-tender, then tossed with plump raisins, fresh parsley, and a spiced lemon dressing featuring paprika, cumin, cinnamon, and a hint of cayenne. Ingredients
- 1 lb baby carrots
- 2 tablespoons lemon juice
- 1 teaspoon sugar
- 1/2 teaspoon paprika
- 1/4 teaspoon ground cumin
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 1 tablespoon olive oil
- 1/4 cup minced fresh parsley leaves
- 1 cup raisins
- 1 leaf lettuce (optional)
Method
- Cut the carrots into roughly three pieces each.
- Boil the carrot pieces in water until they are crisp-tender, which should take about five minutes.
- Drain the cooked carrots, rinse them under cold water, and drain once more.
- As the carrots cool, mix the lemon juice, sugar, paprika, cumin, cinnamon, salt, and cayenne pepper in a medium bowl.
- Whisk the mixture until the sugar and salt have fully dissolved.
- Add the olive oil, fresh parsley, and raisins to the bowl and stir them in.
- Place the cooled carrots into the dressing and toss everything together to coat evenly.
- Cover the salad and refrigerate it for at least one hour to let the flavours combine, giving it a stir now and then.
