Homemade Tahini
Create your own smooth and rich tahini paste at home. This straightforward Moroccan recipe involves toasting sesame seeds before blending them with peanut oil to achieve the perfect consistency. The process takes just 26 minutes and results in about 1 1/2 cups of fresh tahini, which can be seasoned with a small amount of salt if you wish.
Ingredients
- 3/4 lb sesame seeds
- 2 teaspoons peanut oil
- 3 tablespoons peanut oil
- salt, very little (optional)
Method
- Spread the sesame seeds on a baking sheet and toast them in a 350°F oven for 20 minutes, until they are lightly roasted.
- Transfer the toasted seeds to a medium food processor and process them for 3 minutes.
- Pour in 2 teaspoons of peanut oil and process the mixture on high for 30 seconds.
- Add 3 tablespoons of peanut oil and continue processing until the paste becomes very smooth, which should take about 2 more minutes.
- You may add a very little salt at this stage, if desired.
