Lemon & Cilantro Moroccan Olives
These vibrant Moroccan olives are infused with fresh cilantro, parsley, garlic, and a blend of cumin and cayenne. Lemon juice and olive oil create a bright marinade. The process begins by soaking the olives overnight to reduce their saltiness, followed by a week-long marination in the fridge to develop the flavours fully. This makes a superb addition to a mezze platter or a tangy salad component.
Ingredients
- 1 (13 ounce) jar imported mixed olives
- 3 tablespoons chopped fresh cilantro
- 3 tablespoons chopped fresh flat leaf parsley (the curly kind is good, too)
- 1/2 clove garlic, minced
- 1/8-1/4 teaspoon cayenne pepper
- 1/4 teaspoon ground cumin
- 2 tablespoons olive oil
- 2 -3 tablespoons fresh lemon juice
Method
- Drain the olives and submerge them in a bowl of cold water. Leave them in the refrigerator overnight.
- The following day, drain the olives thoroughly. Mix them with the chopped cilantro, parsley, minced garlic, cayenne pepper, cumin, olive oil, and fresh lemon juice.
- Let the olives marinate in the refrigerator for at least a week. Stir them now and then to blend the flavours.
