3 Corn Casserole

Ingredients

  • 1/2 cup butter, softened
  • 1 cup sour cream
  • 1 egg
  • 1 (16 ounce) can whole kernel corn, drained
  • 1 (16 ounce) can cream-style corn, undrained
  • 4 1/2 ounces corn muffin mix
  • 1 cup cheddar cheese, grated

Method

  1. Combine the softened butter, sour cream and egg in a large mixing bowl.
  2. Add the drained whole kernel corn, the undrained cream-style corn and the corn muffin mix to the bowl and stir everything together.
  3. Transfer the combined mixture into a buttered two-quart casserole dish.
  4. Place the dish into an oven preheated to 375 degrees and bake for approximately 45 minutes.
  5. Take the casserole out of the oven, sprinkle over the grated cheddar cheese and stir it through thoroughly.
  6. Put the dish back into the oven and continue baking for a further 15 minutes, until it is lightly puffed, bubbling and golden at the edges.
