3 Corn Casserole
This rich and creamy corn casserole is a wonderful comfort food side dish. It combines whole kernel corn, cream-style corn, and a corn muffin mix with sour cream and cheddar cheese for a deliciously hearty result. The recipe is simple to prepare and bakes to a golden, bubbly finish. It serves four people and takes just over an hour to make from start to finish.
Ingredients
- 1/2 cup butter, softened
- 1 cup sour cream
- 1 egg
- 1 (16 ounce) can whole kernel corn, drained
- 1 (16 ounce) can cream-style corn, undrained
- 4 1/2 ounces corn muffin mix
- 1 cup cheddar cheese, grated
Method
- Combine the softened butter, sour cream and egg in a large mixing bowl.
- Add the drained whole kernel corn, the undrained cream-style corn and the corn muffin mix to the bowl and stir everything together.
- Transfer the combined mixture into a buttered two-quart casserole dish.
- Place the dish into an oven preheated to 375 degrees and bake for approximately 45 minutes.
- Take the casserole out of the oven, sprinkle over the grated cheddar cheese and stir it through thoroughly.
- Put the dish back into the oven and continue baking for a further 15 minutes, until it is lightly puffed, bubbling and golden at the edges.
