2 Corn Casserole

Ingredients

  • 1/2 cup margarine (approx 1 stick)
  • 3/4 cup chopped green pepper
  • 1/3 cup onion
  • 3 eggs
  • 17 ounces whole kernel sweet corn, with liquid
  • 17 ounces cream-style corn
  • 8 1/2 ounces corn muffin mix
  • 1 cup shredded cheddar cheese

Method

  1. Heat your oven to 350°F.
  2. Cook the chopped green pepper and onion in the margarine.
  3. In a bowl, mix all the prepared ingredients together, leaving out the shredded cheese.
  4. Transfer the combined mixture into a greased two quart casserole dish.
  5. Top with the cheese and place in the oven to bake for 45-55 minutes.
  6. Allow the baked casserole to stand for 5 minutes before you serve it.
