2 Corn Casserole
This simple casserole brings together two types of corn for a rich and satisfying side dish. Sautéed green pepper and onion are folded into a mixture of whole kernel and cream-style corn, along with eggs and corn muffin mix. Ingredients
- 1/2 cup margarine (approx 1 stick)
- 3/4 cup chopped green pepper
- 1/3 cup onion
- 3 eggs
- 17 ounces whole kernel sweet corn, with liquid
- 17 ounces cream-style corn
- 8 1/2 ounces corn muffin mix
- 1 cup shredded cheddar cheese
Method
- Heat your oven to 350°F.
- Cook the chopped green pepper and onion in the margarine.
- In a bowl, mix all the prepared ingredients together, leaving out the shredded cheese.
- Transfer the combined mixture into a greased two quart casserole dish.
- Top with the cheese and place in the oven to bake for 45-55 minutes.
- Allow the baked casserole to stand for 5 minutes before you serve it.
