15 Bean Soup in the Instant Pot
This recipe creates a robust and satisfying 15 bean soup using an Instant Pot pressure cooker. It combines a bag of dried beans with a flavourful ham bone, chopped vegetables, and a blend of spices including paprika and thyme. The soup is cooked under pressure for 30 minutes, then simmered to allow the flavours to develop fully. It's a simple, one-pot meal that results in 9 cups of soup, perfect for serving with cornbread.
Ingredients
- 1 (20 ounce) bag of 15 bean soup dried beans
- 10 cups water
- 1 large onion, chopped
- 3 large carrots, chopped
- 1 garlic clove, minced
- 1 teaspoon olive oil
- 1 hambone from a spiral sliced ham
- 1 lemon, juiced
- 1 (10 3/4 ounce) can condensed tomato soup
- 1 teaspoon paprika
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon black pepper
- 1/2 teaspoon oregano
- 1 teaspoon thyme
- 1 teaspoon salt
Method
- Bring 10 cups of water to a boil in a separate pot. using hot water will speed up the pressure building process.
- Prepare the vegetables by chopping the onion and carrots, and mincing the garlic clove.
- Select the Saute function on the Instant Pot, warm the olive oil, then cook the onions and carrots until the onions become translucent. Stir in the garlic and cook for 1 minute longer.
- Place the ham bone and the dried beans from the package (excluding any seasoning packet) into the pot. Pour in the 10 cups of hot water, ensuring you do not exceed the maximum fill line.
- Choose the Beans/Soup setting on the appliance and set the cooking time for 30 minutes.
- Once the cycle finishes, switch the pot off and allow it to rest for 10 minutes. Then perform a quick pressure release and carefully remove the lid.
- Take out the ham bone and discard it, or optionally shred any meat from it and return the meat to the soup.
- Stir in the lemon juice, condensed tomato soup, and all the listed seasonings. Activate the Saute function again and let the soup cook for about 30 minutes to blend the flavours.
- Serve the finished soup, ideally accompanied by corn bread.
