100% Whole Wheat Bread

Ingredients

  • 1 cup water (Warm)
  • 2 tablespoons yeast
  • 1 egg
  • 1 1/2 teaspoons salt
  • 1/3 cup honey
  • 2 cups water
  • 1/4 cup applesauce (plain)
  • 7 -8 cups whole wheat flour

Method

  1. Let the yeast sit in the warm water for about 5-10 minutes. You can add a pinch of sugar to help it along.
  2. In a large bowl, combine the egg, salt, honey, water and applesauce.
  3. Stir in 1-2 cups of the whole wheat flour until the mixture is smooth.
  4. Pour the foamy yeast mixture into the bowl.
  5. Keep adding the remaining flour gradually, stirring with a wooden spoon until it gets tough, then knead it by hand.
  6. Transfer the dough to a floured surface and knead until elastic and smooth, shaping it into a ball.
  7. Place the dough ball into a greased large bowl, turning it to coat all sides.
  8. Cover the bowl with a damp towel and leave it on the counter to rise, or cover and refrigerate for baking later.
  9. Once the dough has doubled in size, which takes about 1 1/2 to 2 hours, turn it out, punch it down and split it into three pieces. Roll each piece into a long rectangle and roll it up.
  10. Put each rolled piece of dough into a greased bread pan and allow it to rise for 45-60 minutes.
  11. Bake the loaves in an oven at 350°F for exactly 30 minutes.
  12. For best results, freeze the warm bread in bread bags to retain moisture. Extra loaves can be frozen for up to 2 months.
