Ingredients

  • cooking spray, for pan
  • 1 1/2 cups flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 3/4 cup butter, melted
  • 1 teaspoon vanilla
  • 1/2 cup finely chopped macadamia nuts
  • 3 ounces white chocolate baking squares, broken into small pieces

Method

  1. Preheat the oven to 350°F.
  2. In a large bowl, stir together the flour, sugar, baking powder and baking soda. Pour in the melted butter and vanilla, mixing thoroughly. Fold in the chopped macadamia nuts until combined.
  3. Transfer the mixture to a 15x10x1-inch pan that has been coated with cooking spray. Press it firmly into an even layer covering the entire base.
  4. Bake for 15 to 18 minute until the edges are lightly browned. Switch off the oven and leave the dessert inside for 5 to 8 minute more to achieve a golden colour. Take it out and allow it to cool fully.
  5. Following the package instructions, melt the white chocolate pieces. Drizzle the melted chocolate over the cooled brittle. Allow it to set until firm, then break it into irregular pieces for serving.
