Garam Masala Spiced Nuts

This recipe creates a fragrant batch of spiced nuts, perfect for snacking. An egg white mixture binds sugar and garam masala to roasted cashews, peanuts and toasted pecans. After baking until crisp and golden, the nuts are cooled and broken into pieces. They store well in an airtight container. The method is adapted from a version by Tara Mataraza Desmond.

Garam Masala Spiced Nuts

Ingredients

  • 1 medium egg white
  • 3 tablespoons sugar
  • 1 1/2 teaspoons garam masala (store-bought or homemade)
  • 1 cup roasted salted cashews
  • 1 cup dry roasted salted peanut
  • 1 cup toasted pecan halves

Method

  1. Set your oven to 300 degrees. Prepare a baking sheet by lining it with parchment paper or a silicone mat.
  2. In a bowl, whisk the egg white with 1 teaspoon water until it becomes frothy and firm. Add the sugar and garam masala, then stir in all the nuts until they are evenly coated.
  3. Pour the nut mixture onto the lined baking sheet, spreading it out. Bake for about 30 minutes, stirring now and then, until the nuts turn golden and crisp.
  4. Take the baking sheet from the oven and allow the nuts to cool fully. Once cool, break them into smaller pieces.
  5. Keep the finished spiced nuts in an airtight container for storage.
