Cinnamon Roasted Almonds
These homemade cinnamon roasted almonds are a deliciously sweet and spiced treat. An egg white mixture helps a blend of sugars and cinnamon cling to the nuts before they are slowly roasted in the oven. The result is a wonderfully crunchy and aromatic snack that is perfect for sharing or storing. You will need about 70 minutes from start to finish to make two cups of these flavourful almonds.
Ingredients
- 1 egg white
- 1 teaspoon cold water
- 2 cups whole almonds
- 3 tablespoons white sugar
- 3 tablespoons brown sugar
- 1 tablespoon ground cinnamon
- 1/4 teaspoon salt
Method
- Set your oven to heat to 250 degrees F. In a medium bowl, whisk the egg white with the cold water until it becomes frothy.
- Place the whole almonds into the bowl and stir them thoroughly to ensure they are fully coated in the egg white mixture.
- In a separate dish, combine the white sugar, brown sugar, ground cinnamon, and salt.
- Sprinkle this sugar and spice mix over the almonds and stir again until the nuts are evenly covered.
- Prepare a baking sheet by lining it with parchment paper or a Silpat mat.
- Spread the coated almonds out in a single, even layer on the prepared baking sheet.
- Place the almonds in the preheated oven and roast them for 1 hour.
- Remember to stir the almonds every 20 minutes during the roasting time.
- Once roasted, take the baking sheet from the oven and let the almonds cool completely.
- Transfer the cooled cinnamon almonds into airtight containers for storage.
