Uncle Bill's Lapshevnik - Russian Noodle Casserole
This is a classic Russian noodle casserole, known as Lapshevnik, which originated during times of scarcity. The recipe has been adapted over the years into a straightforward and flavourful bake. It combines ramen noodles with a seasoned egg custard, baked until set and golden. The result is a versatile dish that can be served warm with butter or enjoyed cold as a snack.
Ingredients
- 5 packages ramen noodles, do not use the spices
- 3 cups water, for cooking noodles
- 8 large eggs, beaten
- 1/4 cup whipping cream or 1/4 cup half-and-half cream
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon granulated sugar
Method
- Place the noodles and 3 cups of water into a large saucepan.
- Bring the water to a boil and allow the noodles to cook for about 3 minutes.
- Drain the cooked noodles thoroughly and set them aside.
- Heat your oven to 400 degrees F.
- Grease the inside of an 8" x 8" oven-proof casserole dish with vegetable oil or margarine.
- Combine the beaten eggs, whipping cream, baking powder, salt and sugar in a mixing bowl.
- Stir the drained noodles into the egg mixture until well combined.
- Transfer the noodle mixture into the prepared casserole dish.
- Bake in the preheated 400 F oven for 25 to 30 minutes, until the top turns a golden brown colour.
- Serve the baked casserole with melted margarine or butter.
- Lapshevnik is also suitable for eating cold, making it a convenient snack.
