Syrniki (Farmers Cheese Pancakes)
These traditional Russian pancakes, known as syrniki, are made from farmers cheese and have a delightfully soft texture. The recipe requires only a handful of basic ingredients and yields about 25 pieces. The process involves creating a slightly sticky dough, shaping it into patties, and frying them until golden. They are best served warm, often with sour cream, jam, or honey. Dry cottage cheese can be used as a substitute for farmers cheese if needed.
Ingredients
- 8 ounces farmer cheese
- 3 eggs
- 1 1/4 cups all-purpose flour, plus more for dusting
- 2 tablespoons sugar
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
Method
- Combine the eggs and farmers cheese in a large bowl, mixing them together thoroughly with a fork or spoon.
- Take another large bowl and stir together the sifted flour, sugar, salt, and baking soda until they are evenly mixed.
- Pour the dry flour mixture into the bowl with the wet egg and cheese mixture, then stir everything well until fully incorporated. the resulting dough will be sticky and a bit lumpy.
- Move the dough to a work surface that has been generously dusted with flour, sprinkle more flour on top, and use your hands to form it into a log roughly 2 inches wide.
- Slice the log vertically into pieces approximately 3/4 inch thick using a knife. Coat the cut sides of each piece in flour, then use your fingers to press and shape each one into a flattened circle.
- Place a non-stick skillet or griddle on the stove to heat. Add a few tablespoons of oil to the skillet or grease the griddle well. After shaking off any extra flour, cook the syrniki for about 2-3 minutes on each side.
- Transfer the cooked syrniki onto paper towels to drain and absorb any excess oil.
