This satisfying bake combines three varieties of beans with crispy bacon in a tangy, sweet sauce flavoured with molasses, vinegar, and herbs. Ingredients

  • 5 slices bacon
  • 1 large onion, coarsely chopped
  • 1 tablespoon dry mustard
  • 1 1/2 teaspoons dried thyme
  • 3/4 cup ketchup
  • 1/2 cup apple cider vinegar
  • 1/3 cup dark molasses
  • 1/3 cup water
  • 1 bay leaf, broken in half
  • 1 (15 ounce) can red kidney beans, rinsed,drained
  • 1 (15 ounce) can black beans, rinsed,drained
  • 1 (15 ounce) can cannellini beans, rinsed,drained (white kidney beans)
  • 1 teaspoon Tabasco sauce

Method

  1. Set your oven to 350°F. In a large pot suitable for the oven, cook the bacon until crisp.
  2. Move the cooked bacon onto paper towels to drain.
  3. Crumble the drained bacon and set it aside for later.
  4. Place the chopped onion into the bacon drippings remaining in the pot and cook for about 5 minutes until nearly tender.
  5. Stir in the dry mustard and thyme, continuing to cook for 1 minute.
  6. Add the ketchup, vinegar, molasses, water, bay leaf, and all the drained beans to the pot.
  7. Season the mixture with salt and pepper according to your taste.
  8. Cover the pot and place it in the oven to bake for 45 minutes, stirring it now and then and adding a little more water if it looks too dry.
  9. Stir the reserved crumbled bacon into the bean mixture.
  10. Return the pot to the oven and continue baking for another 15 minutes.
  11. Take the pot from the oven and remove the bay leaf pieces.
  12. Stir the hot sauce into the finished beans before serving.
