Triple-bean Bake
This satisfying bake combines three varieties of beans with crispy bacon in a tangy, sweet sauce flavoured with molasses, vinegar, and herbs. It is cooked slowly in the oven until thick and flavourful, resulting in a comforting and substantial dish ideal for sharing. The recipe yields enough for four to six people and takes about 85 minutes from start to finish.
Ingredients
- 5 slices bacon
- 1 large onion, coarsely chopped
- 1 tablespoon dry mustard
- 1 1/2 teaspoons dried thyme
- 3/4 cup ketchup
- 1/2 cup apple cider vinegar
- 1/3 cup dark molasses
- 1/3 cup water
- 1 bay leaf, broken in half
- 1 (15 ounce) can red kidney beans, rinsed,drained
- 1 (15 ounce) can black beans, rinsed,drained
- 1 (15 ounce) can cannellini beans, rinsed,drained (white kidney beans)
- 1 teaspoon Tabasco sauce
Method
- Set your oven to 350°F. In a large pot suitable for the oven, cook the bacon until crisp.
- Move the cooked bacon onto paper towels to drain.
- Crumble the drained bacon and set it aside for later.
- Place the chopped onion into the bacon drippings remaining in the pot and cook for about 5 minutes until nearly tender.
- Stir in the dry mustard and thyme, continuing to cook for 1 minute.
- Add the ketchup, vinegar, molasses, water, bay leaf, and all the drained beans to the pot.
- Season the mixture with salt and pepper according to your taste.
- Cover the pot and place it in the oven to bake for 45 minutes, stirring it now and then and adding a little more water if it looks too dry.
- Stir the reserved crumbled bacon into the bean mixture.
- Return the pot to the oven and continue baking for another 15 minutes.
- Take the pot from the oven and remove the bay leaf pieces.
- Stir the hot sauce into the finished beans before serving.
