Cheesy Grits Casserole

Ingredients
- 4 cups water
- 1 teaspoon salt
- 1 cup quick-cooking grits
- 4 eggs, lightly beaten
- 1 lb pork sausage, browned and drained
- 1 1/2 cups shredded sharp cheddar cheese, divided (or more if desired)
- 1/2 cup milk
- 1/4 cup butter, softened
Method
- Preheat your oven to 350 degrees.
- Lightly grease a 13x9-inch baking dish.
- Place the water and salt into a saucepan and bring to a rolling boil.
- Gradually whisk the quick-cooking grits into the boiling water.
- Lower the heat and continue cooking the grits for 4-5 minutes, giving it an occasional stir.
- Take the pan off the heat and mix a little of the hot grits into the beaten eggs to temper them.
- Combine the egg mixture back into the saucepan with the rest of the grits.
- Add the browned sausage, milk, and softened butter, stirring well until the butter has fully melted.
- Transfer the complete mixture into your greased baking dish.
- Evenly scatter the reserved shredded cheddar cheese over the top.
- Bake without a cover for 50-55 minutes, until the surface turns a golden brown.
