Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 teaspoon salt, to taste
  • 2/3 cup milk, at room temperature
  • 2/3 cup water, at room temperature
  • 3 large eggs
  • 4 tablespoons roast beef pan drippings
  • 4 teaspoons minced fresh rosemary
  • 1/8-1/4 teaspoon cayenne, to taste

Method

  1. Mix the flour and salt together in a bowl.
  2. Using a handheld mixer, pour in the milk in a steady stream and blend until smooth.
  3. Incorporate the water and eggs, then beat the mixture until it is well combined and appears bubbly.
  4. Cover the bowl and allow the batter to rest at room temperature for 1 hour.
  5. Set your oven to heat to 450 degrees F.
  6. Spoon the roast beef drippings evenly into eight cups of a muffin pan.
  7. Place the pan in the oven to heat the cups until they are nearly smoking.
  8. Give the rested batter a final beat until bubbly, mix in the rosemary and cayenne, then portion it into the hot muffin cups.
  9. Bake in the lower third of the oven for 10 minutes, ensuring you do not open the oven door.
  10. Lower the oven temperature to 350 degrees F and bake for a further 10 minutes until the puddings are puffed, crisp, and golden brown.
