Cabbage Rolls
These savoury cabbage rolls are a crowd-pleasing dish, ideal for pot lucks or family meals. A filling of ground beef, rice, and vegetables is wrapped in cabbage leaves and baked in a sauce made from brown sugar, lemon juice, and tomato sauce. The rolls bake for 1 hour covered, then a further 20 minutes uncovered, resulting in a flavourful and comforting oven-baked meal.
Ingredients
- 1 lb ground beef
- 1/4 cup raw long grain rice
- 1 egg, beaten
- 1 onion, grated
- 1 carrot, grated
- 1 teaspoon salt
- fresh ground pepper
- 6 slices bacon, minced
- 12 wilted cabbage leaves, thick veins trimmed to thin
- 1/2 cup brown sugar
- 1/4 cup lemon juice
- 1 cup tomato sauce
Method
- Combine the ground beef, raw long grain rice, beaten egg, grated onion, grated carrot, 1 teaspoon salt, fresh ground pepper and minced bacon in a bowl.
- Portion the meat mixture into the middle of each of the 12 prepared cabbage leaves.
- Fold the leaves around the filling, ensuring the sides are tucked in to fully enclose the meat.
- Arrange the rolls with the folded seam facing downwards in a greased baking dish.
- Whisk the brown sugar, lemon juice and tomato sauce together in a separate bowl.
- Pour the prepared sauce over the cabbage rolls, cover the dish securely and bake at 375°F for 1 hour.
- Remove the cover and continue baking for 20 minutes longer.
