Thai Noodle Salad With Peanut Sauce
This fresh and colourful salad combines chilled noodles with a mix of grated cabbage, carrots, radish, and sliced bell pepper. It is all tossed in a zesty homemade peanut sauce made with orange juice, lime, and ginger. Finished with a garnish of roasted peanuts, it's a quick and satisfying dish ideal for a light lunch or dinner. The recipe serves four people and takes about 30 minutes to prepare.
Ingredients
- 6 ounces noodles (brown rice noodles, pad thai style rice noodles, soba noodles, linguini)
- 4 cups mix cabbage, carrots and radish, grated
- 1 red bell pepper, finely sliced
- 3 scallions, sliced
- 1/2 bunch cilantro, chopped (or substitute basil and mint)
- 1 jalapeno, finely chopped (about 1 tablespoon)
- 1/2 cup peanuts, roasted, crushed (for garnish)
- 3 thin slices ginger, cut across the grain, about the size of a quarter
- 1 large garlic clove
- 1/4 cup peanut butter (or substitute almond butter)
- 1/4 cup fresh orange juice (roughly half an orange)
- 3 tablespoons fresh lime juice (1 lime)
- 2 tablespoons soy sauce
- 3 tablespoons honey or 3 tablespoons Agave
- 3 tablespoons toasted sesame oil
- 1/2-1 teaspoon cayenne pepper (or sriracha sauce)
- 1/2 teaspoon salt
Method
- Cook the noodles following the package instructions. Once cooked, drain them and rinse under cold water to chill.
- While the noodles cook, combine all the ingredients for the peanut sauce in a blender. Blend the mixture until it becomes completely smooth.
- Take a large serving bowl and add the shredded vegetables, sliced red bell pepper, scallions, cilantro, and chopped jalapeño. Toss these ingredients together. Add the chilled noodles to the bowl and toss once more to combine.
- Pour the prepared peanut sauce over the noodle and vegetable mixture. Toss everything thoroughly so the sauce coats everything evenly. Taste the salad and adjust the seasoning with salt if needed. Serve garnished with the crushed roasted peanuts and extra cilantro, accompanied by a lime wedge.
