Tapenade
This tapenade is a robust and flavourful spread, blending briny black olives with toasted walnuts, sharp parmesan cheese and fresh herbs. The mixture is pulsed into a coarse paste in a food processor, then combined with a base of garlic infused lemon juice and olive oil. It is a quick and versatile recipe, perfect for spreading on thin slices of baguette as an appetiser or snack. The entire process takes only 15 minutes to complete.
Ingredients
- 10 cloves garlic
- 2 lemons, juice of
- 1 (10 ounce) can black olives
- 1 cup chopped parsley
- 8 green onions, coarsely chopped
- 1 tablespoon chopped basil
- 1 cup walnuts
- 2 cups finely chopped grated parmesan cheese
- 3/4 cup olive oil
- 1 loaf baguette, sliced in thin rounds
Method
- Press the garlic cloves directly into the lemon juice. If you do not own a press, mince the garlic finely before adding it to the juice. Set this mixture aside while you gather the remaining items.
- Place all the other ingredients into the bowl of a food processor. Process the contents until they form a paste with a fine, chopped texture.
- Transfer the processed mixture to a separate bowl. Stir in the reserved garlic and lemon juice, along with the olive oil, ensuring everything is thoroughly combined.
- Present the finished tapenade accompanied by the thinly sliced baguette rounds for serving.
