Cilantro Jalapeno Hummus
This vibrant hummus combines creamy garbanzo beans with the fresh, herby notes of cilantro and a gentle kick from jalapeno peppers. Blended with garlic, lime juice and olive oil, it creates a smooth, flavourful dip. The mixture benefits from chilling time to let the tastes develop fully. It is an ideal choice for a snack, appetiser or sandwich filling.
Ingredients
- 2 cloves garlic, minced
- 2 (15 ounce) cans garbanzo beans, rinsed and drained
- 3 tablespoons lime juice
- 1/2 teaspoon salt
- 1/2 cup olive oil
- 3/4 cup fresh cilantro, chopped
- 2 jalapeno peppers, seeded and minced
Method
- Pulse the minced garlic in your food processor.
- Incorporate the rinsed garbanzo beans, lime juice and salt.
- Process the mixture into a puree.
- With the motor running, gradually pour in the olive oil and blend for 1-2 minute until thickened.
- Put in the chopped cilantro and minced jalapeno, then pulse for 10 seconds.
- Move the hummus to a bowl and refrigerate for a few hours so the flavours can meld.
