Cilantro Jalapeno Hummus

Ingredients

  • 2 cloves garlic, minced
  • 2 (15 ounce) cans garbanzo beans, rinsed and drained
  • 3 tablespoons lime juice
  • 1/2 teaspoon salt
  • 1/2 cup olive oil
  • 3/4 cup fresh cilantro, chopped
  • 2 jalapeno peppers, seeded and minced

Method

  1. Pulse the minced garlic in your food processor.
  2. Incorporate the rinsed garbanzo beans, lime juice and salt.
  3. Process the mixture into a puree.
  4. With the motor running, gradually pour in the olive oil and blend for 1-2 minute until thickened.
  5. Put in the chopped cilantro and minced jalapeno, then pulse for 10 seconds.
  6. Move the hummus to a bowl and refrigerate for a few hours so the flavours can meld.
