Stir Fried Mixed Peppers and Mushrooms
This colourful stir fry is ideal for a Sunday brunch or as a side dish at a barbecue. The key is to cook the peppers briefly so they retain their crisp texture. The recipe combines sweet bell peppers, optional jalapeños, garlic and mushrooms, all quickly cooked in a skillet. It takes only 24 minutes to prepare and serves four people. You can adapt it by using leftover oven fries and omitting the mushrooms if you prefer.
Ingredients
- 1 cup sweet green pepper, seeded,membranes removed and cut in thin strips
- 1 cup sweet red pepper, prepared the same ad the green pepper
- 1 cup yellow sweet peppers or 1 cup orange bell pepper, prepared the same as the green peppers
- 3 jalapeno peppers, seeded,membranes removed and finely chopped (optional)
- 3 cloves garlic, chopped
- 1 1/2 cups mushrooms, cleaned & sliced
- salt & pepper
- 1 tablespoon vegetable oil
Method
- Warm the vegetable oil in a skillet and cook the chopped garlic until it turns a light brown colour.
- Introduce the sliced mushrooms to the skillet and stir fry them for 2 minutes.
- Place all the prepared peppers into the skillet and continue to stir fry for no longer than 6 minutes.
