Green Bean, Tomato & Anaheim Peppers
This is a versatile baked vegetable dish ideal for when your garden is plentiful. Fresh green beans, cherry tomatoes, and Anaheim peppers are combined with garlic and baked in a light chicken stock. The recipe is adaptable to your taste. you can adjust the cooking time for crisper beans or add cheese or butter if you wish. It serves two people and takes about 40 minutes to prepare and cook.
Ingredients
- 1/2 lb fresh green beans, cleaned,tips removed
- 5 cherry tomatoes, cut in half
- 1 other pepper or 1 yellow banana pepper, seeds removed cut in rings
- 3 cloves garlic, cleaned cut in chunks
- 1/4 cup chicken stock
Method
- Place the green beans, halved tomatoes, pepper rings, and garlic chunks into an ovenproof dish, seasoning with salt and pepper.
- Add the chicken stock to the dish.
- Cover the dish and bake at 350F for approximately 30 minutes, using less time for crisper beans.
