Ingredients

  • 10 plum tomatoes, chopped
  • 3 medium green peppers, cut into 1 inch pieces
  • 8 ounces shredded mozzarella cheese
  • 1 (3 1/2 ounce) package pepperoni
  • 1 (2 1/4 ounce) can sliced ripe olives, drained
  • 1/4 cup chopped onion
  • 1/3 cup tomato juice
  • 1/4 cup red wine vinegar or 1/4 cup cider vinegar
  • 1/4 cup olive oil
  • 1 clove garlic, minced
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon pepper
  • 3/4 cup seasoned croutons

Method

  1. Place the chopped tomatoes, green pepper pieces, shredded mozzarella cheese, pepperoni, drained olives and chopped onion into a large bowl and mix them thoroughly.
  2. Whisk the tomato juice, vinegar, olive oil, minced garlic, dried basil and pepper together in a separate small bowl until well combined.
  3. Pour the prepared dressing over the tomato and cheese mixture, then toss everything to ensure an even coating.
  4. Cover the bowl and place it in the refrigerator to chill for several hours.
  5. Add the seasoned croutons to the salad and give it a gentle stir immediately before you are ready to serve.
