Splendid Raspberry Spinach Salad
This colourful salad combines fresh spinach leaves with sweet raspberries, sliced kiwi and crunchy macadamia nuts. It is brought together with a simple, fruity dressing made from raspberry vinegar and jam. The whole dish comes together quickly for a light and refreshing meal or side.
Ingredients
- 2 tablespoons raspberry vinegar
- 2 tablespoons raspberry jam
- 1/3 cup vegetable oil
- 8 cups spinach, rinsed,stemmed and torn into pieces
- 3/4 cup coarsely chopped macadamia nuts or 3/4 cup toasted sliced almonds
- 1 cup fresh raspberry
- 3 kiwi fruits, peeled and sliced
Method
- To make the dressing, mix the raspberry vinegar and raspberry jam in a blender or a small bowl.
- While blending or whisking, slowly pour in the vegetable oil to combine it thoroughly.
- In a large bowl, combine the spinach with half of the nuts, half of the raspberries and half of the sliced kiwi. Pour the dressing over the top and toss everything together.
- Scatter the remaining nuts, raspberries and kiwi slices over the dressed salad. Serve straight away.
