Mixed Berry Oven Jam
This straightforward jam requires minimal effort for a delicious result. Combine strawberries, raspberries, and blackberries with sugar, lemon, and salt in a baking dish. The oven does the work, cooking the fruit until soft and syrupy. After baking, vanilla is stirred in and the mixture is mashed before being transferred to a jar. The process yields about one cup of sweet, homemade preserve.
Ingredients
- 16 ounces strawberries
- 6 ounces raspberries
- 6 ounces blackberries
- 1/2 cup sugar
- 1 lemon, zest of
- 2 teaspoons lemon juice
- 1/4 teaspoon salt
- 2 teaspoons vanilla extract
Method
- Heat your oven to 450°F.
- Take a 9x13 inch metal cake pan and line it with aluminium foil. Crumple a sheet of parchment paper into a ball, then open it out and press it into the pan, ensuring it covers the bottom and sides without any gaps.
- Prepare the strawberries by removing the hulls and cutting each one in half.
- Place all the ingredients, leaving out the vanilla extract, into the prepared pan and mix them together.
- Cook in the oven for 25-30 minutes, until the fruit has softened and the liquid is thick and bubbling.
- Take the pan from the oven and stir in the vanilla extract.
- Use a fork to gently crush the cooked fruit, being careful not to tear the parchment. Allow the mixture to cool.
- Lift the parchment paper to create a funnel and guide the jam into a mason jar or another container with a tight seal.
