Ingredients

  • 2 lbs berries (blackberries, raspberries, loganberries, etc.)
  • 4 cups sugar
  • 1/4 cup lemon juice (optional)

Method

  1. Mix the berries with the sugar and allow them to stand for about 10 minutes until the juices start to flow.
  2. Place the mixture over heat and bring it slowly to a boil, stirring to ensure the sugar dissolves completely.
  3. If you are using it, stir in the lemon juice at this stage.
  4. Continue cooking the mixture rapidly until it is almost at the gelling point.
  5. As the preserve begins to thicken, stir it often to stop it from sticking to the pan.
  6. Take the pan off the heat.
  7. If required, skim any foam from the surface of the preserves.
  8. Carefully ladle the hot preserves into prepared hot jars, making sure to leave a 1/4 inch head space.
  9. Secure the two-piece caps onto the jars.
  10. Process the jars for 15 minutes in a boiling water canner.
  11. This recipe yields about 4 half pints.
