Spinach with Pine Nuts and Garlic
This Mediterranean side dish offers a stylish and flavourful accompaniment, prepared with remarkable speed. Fresh spinach is wilted down before being combined with pine nuts toasted in olive oil and fragrant garlic. The entire process takes only 5 minutes, resulting in a vibrant and nutritious dish ideal for serving alongside your main course at dinner or supper. Ingredients
- 1kg fresh spinach or 500g frozen leaf spinach
- 3 tbsp olive oil
- 3 tbsp pine nut
- 2 garlic cloves finely chopped or crushed
Method
- Thoroughly wash the fresh spinach and pack it into a large saucepan. Add a small amount of boiling water, cover with a lid, and cook for 2-3 mins until the leaves have fully wilted.
- Transfer the cooked spinach to a colander to drain. Press it down firmly using the side of a small plate to remove all excess water. If using frozen leaf spinach, defrost it in the microwave first and drain thoroughly.
- While the spinach drains, warm the olive oil in a pan. Add the pine nuts and fry them until they turn a golden colour. Introduce the chopped garlic and fry for a very short time, then mix in the drained spinach. Stir everything together until the spinach is hot. Season to taste and transfer to a warmed serving dish.
