Honey & Thyme Tomatoes
This Mediterranean dish celebrates the natural sweetness of tomatoes, enhanced through roasting. Halved tomatoes are baked with garlic and thyme until soft and juicy, then finished with a simple honey, balsamic and mustard dressing. The result is a versatile, flavourful side or starter that pairs wonderfully with bread to soak up the delicious juices. It serves six and can be prepared ahead of time, making it ideal for entertaining.
Ingredients
- 650g tomato
- 1 large garlic clove thinly sliced
- leaves from 2 large sprigs thyme
- 1 tbsp olive oil
- 2 tbsp honey
- 2 tbsp balsamic vinegar
- 1 tsp wholegrain mustard
Method
- Set your oven to 200C/fan 180C/gas 6. Arrange the halved tomatoes in one layer in a large ovenproof dish, cut sides facing up. Place a garlic slice into each half and sprinkle with thyme leaves. Add a drizzle of oil, season well, and bake for 30-40 mins until the tomatoes are tender and juicy. Allow to cool. You can roast and refrigerate them up to 3 days in advance. Serve at room temperature.
- For serving, gently transfer the tomatoes to a plate and spoon over some of the cooking juices. Combine the honey, vinegar, mustard and a pinch of seasoning in a bowl to create a dressing. Drizzle this over the tomatoes and finish with an extra scattering of thyme leaves.
