Hot Avo and Bacon Caesar
This Mediterranean-inspired dish is a perfect quick meal for two. It combines crispy dry-fried bacon with creamy avocado and crisp romaine lettuce, all layered on warmed bread and finished with a generous drizzle of Caesar salad dressing. Ready in just 10 minutes, it's ideal for a satisfying brunch, lunch, or light supper. The simple assembly makes it a fuss-free option that delivers great flavour with minimal effort.
Ingredients
- 6 rashers of smoked streaky bacon
- 1 ripe avocado
- 2 thick slices of granary bread or malted oat bread (we used Duchy Original)
- 4 tbsp Caesar salad dressing
- 8 romaine lettuce leaves
Method
- Place a large non-stick frying pan on the heat and dry fry the bacon rashers for 4 minutes on each side until they turn golden. As the bacon cooks, prepare the avocado by halving it, removing the stone, and slicing the flesh. Also, place the bread in a toaster to warm it slightly, ensuring it does not become fully toasted.
- Take the warmed bread slices and cover them with half of the Caesar dressing. Slice the lettuce roughly and arrange it over the bread along with the avocado slices. Chop the cooked bacon into large pieces and scatter these over the lettuce. Finish by drizzling the remaining dressing over the top, adding a grind of black pepper, and serve using a knife and fork.
