Smoked salmon with grapefruit salad
This Mediterranean starter combines smoked salmon with a vibrant citrus salad. Grapefruit segments are prepared and their juice is reduced to a syrup to create a dressing with olive oil. The citrus is mixed with lemon segments and arranged with the salmon, then finished with the dressing and fresh coriander. It serves four and is ready in 30 minutes.
Ingredients
- 3 grapefruit (a selection of yellow and pink if you want)
- 100ml olive oil
- 1 lemon
- 12 slices smoked salmon
- large handful coriander seed sprigs
Method
- Remove the pith from the grapefruit and segment them over a bowl to collect the juice. Squeeze the leftover membranes into the bowl and discard them. Transfer the juice to a saucepan and boil for about 10 mins until it reduces to a few syrupy tablespoons. Combine this with the olive oil and set it aside.
- Combine the lemon segments with the grapefruit segments. Arrange the 12 slices of smoked salmon across four plates. Scatter the citrus segments over the salmon. Drizzle the prepared dressing over the top and garnish with the coriander seed sprigs.
