This vibrant Korean side salad features spring onions and red onion, soaked until crisp and curled. Tossed with toasted sesame oil and gochugaru chilli flakes, it delivers a sharp, spicy kick. Spicy Spring Onion Salad

Ingredients

  • 4 spring onions cut into long, thin strips
  • 1/4 small red onion thinly sliced
  • 1/2 tbsp toasted sesame oil
  • 1 tsp gochugaru chilli flakes (see tip)

Method

  1. Place the spring onions and red onion into a large bowl filled with iced water. Soak them for at least 5 mins, or for up to 2 hrs in the fridge, until the spring onions begin to curl.
  2. Once ready to serve, drain the onions thoroughly. Dry them using a salad spinner or by patting with a towel. Move them to a medium bowl. Pour in the sesame oil and gochugaru, add a pinch of salt, and toss everything together until well coated. Serve straight away.
