Spicy Spring Onion Salad
This vibrant Korean side salad features spring onions and red onion, soaked until crisp and curled. Tossed with toasted sesame oil and gochugaru chilli flakes, it delivers a sharp, spicy kick. It's an ideal accompaniment for barbecued dishes, adding a fresh and fiery element to your meal. The whole dish comes together in just 20 minutes, making it a quick and flavourful addition to any spread.
Ingredients
- 4 spring onions cut into long, thin strips
- 1/4 small red onion thinly sliced
- 1/2 tbsp toasted sesame oil
- 1 tsp gochugaru chilli flakes (see tip)
Method
- Place the spring onions and red onion into a large bowl filled with iced water. Soak them for at least 5 mins, or for up to 2 hrs in the fridge, until the spring onions begin to curl.
- Once ready to serve, drain the onions thoroughly. Dry them using a salad spinner or by patting with a towel. Move them to a medium bowl. Pour in the sesame oil and gochugaru, add a pinch of salt, and toss everything together until well coated. Serve straight away.
