Sesame Spinach

Ingredients

  • 1 tbsp toasted sesame oil
  • 1/2 tbsp soy sauce
  • 1/2 tsp toasted sesame seeds crushed
  • 1/2 tsp rice vinegar
  • 1/2 tsp golden caster sugar
  • 1 garlic clove grated
  • 225g spinach stem ends trimmed

Method

  1. Fill a large pot with water and bring it to a boil. Prepare a separate large bowl with cold water and a handful of ice. In a medium bowl, combine the sesame oil, soy sauce, crushed sesame seeds, rice vinegar, sugar, and grated garlic, stirring until the sugar dissolves completely. Set this dressing aside.
  2. Place the spinach in the boiling water and cook until it just wilts. Immediately transfer the spinach to the bowl of ice water. Once cooled, drain thoroughly and squeeze out all excess water. Use your fingers to separate the spinach clumps, then add it to the bowl with the sesame dressing and toss to coat. Cover the bowl and refrigerate for about 1 hr to allow the flavours to develop.
