Quick spicy mooli pickle
This Korean side dish features mooli radish cut into fine matchsticks and quickly pickled. The julienned vegetable is combined with gochugaru chilli flakes, garlic, sugar and rice vinegar. After a brief chill, it transforms into a tangy and spicy condiment ideal for serving alongside main courses. The entire process takes only about 10 minutes of active preparation time.
Ingredients
- 85g mooli peeled and julienned or chopped into fine matchsticks
- 2 tsp sagwa shikcho (apple vinegar) or rice vinegar
- 2 tsp golden caster sugar
- 3/4 tsp gochugaru chilli flakes (see tip)
- 1/2 small garlic clove grated
Method
- Combine all the listed ingredients in a medium-sized bowl along with 1/2 tsp sea salt.
- Stir the mixture thoroughly to ensure the julienned mooli is fully coated.
- Cover the bowl and place it in the refrigerator to chill for 1 hr.
- Serve the pickle once it has chilled.
