This keto-friendly version of a classic comfort dish replaces pasta with cauliflower florets. A rich, aromatic cheese sauce flavoured with Dijon, garlic, cayenne and nutmeg coats the cauliflower before it's finished under the grill. It's topped with toasted almonds and fresh chives for a satisfying texture and flavour. The entire dish comes together in just 18 minutes for a quick and indulgent meal.

Spicy Keto Cauliflower Mac N' Cheese

Ingredients

  • kosher salt & freshly ground black pepper
  • 1 medium head cauliflower, trimmed, cored, and cut into very small florets (about 6 cups)
  • 1 tablespoon unsalted butter
  • 1 medium onion, finely chopped
  • 1/2 cup plus 2 tablespoons whole milk
  • 4 ounces cream cheese, cut into pieces
  • 1 1/4 cups lightly packed coarsely grated cheddar cheese (4 ounces)
  • 1/2 cup lightly packed coarsely grated gruyere (2 ounces)
  • 1 teaspoon Dijon mustard
  • 1/2 garlic clove, finely grated
  • 1/2 teaspoon cayenne, plus more to taste
  • 1/4 teaspoon freshly grated nutmeg, plus more to taste
  • 2/3 cup finely chopped toasted almond
  • 1/4 cup finely chopped chives

Method

  1. Bring a large pot of generously salted water to a boil. Cook the cauliflower florets until crisp tender, about 1 minute, then drain and set aside.
  2. Melt the butter in a large skillet. Add the chopped onion, season well with salt and pepper, and saute until translucent, 5 minutes.
  3. Pour in the milk and add the cream cheese pieces, stirring until melted. Reduce the heat and stir in the cheddar, gruyere, Dijon mustard, grated garlic, 1/2 teaspoon cayenne, and 1/4 teaspoon nutmeg. Cook until the cheese is fully melted and the sauce is smooth. Taste and adjust seasoning with more salt, pepper, cayenne, or nutmeg as you like.
  4. Fold the cooked cauliflower into the cheese sauce to coat it thoroughly. Transfer the skillet to the broiler and cook until the top is deeply golden and bubbling, about 2-3 minutes.
  5. Finish the dish by garnishing it with the finely chopped toasted almonds and chives. Serve straight away.
