Breakfast Mac & Cheese
This savoury breakfast casserole brings together classic macaroni cheese with morning favourites. It features a creamy cheese sauce with sausage and onion, folded through cooked pasta and tomatoes. The mixture is topped with tater tots and eggs, then baked until set. Garnished with fresh scallions, it's a complete and indulgent start to the day.
Ingredients
- 2 tablespoons unsalted butter
- 1/2 medium yellow onion, diced
- 12 ounces breakfast sausage, removed from casing
- 2 tablespoons all-purpose flour
- 1 3/4 cups milk
- 4 ounces cream cheese, diced
- 2 cups shredded sharp cheddar cheese, divided
- 2 cups shredded monterey jack cheese, divided
- 8 ounces macaroni, cooked for 6 minutes, drained and rinsed with cool water
- 2 cups chopped tomatoes
- 10 ounces cooked tater tots
- 6 large eggs
- 3 tablespoons sliced scallion tops
Method
- Set your oven to 425 degrees F. Melt the butter in a large skillet. Cook the diced onion until it softens, which should take 3-5 minutes. Add the breakfast sausage, breaking it into small pieces as it cooks until browned. Mix in the flour thoroughly, then pour in the milk and bring it to a simmer. Once the sauce thickens, stir in the diced cream cheese along with 1 1/2 cups of the cheddar and 1 1/2 cups of the monterey jack cheese until melted and smooth.
- Gently combine the cooked macaroni and chopped tomatoes with the sauce, seasoning with salt and pepper. Pour this into a 2-quart casserole dish. Arrange the cooked tater tots on top. Use a spoon to make six indentations in the mixture and crack an egg into each one. Sprinkle the remaining 1/2 cup of each cheese over the top, being careful not to cover the eggs. Bake until the egg whites are set, approximately 12-15 minutes.
- Finish the dish by scattering the sliced scallion tops over it before serving.
