This inventive dish transforms pizza night by using a rich macaroni cheese as the foundation. A creamy cheese sauce is blended with cooked pasta and marinara, then spread on a sheet pan. Sheet Pan Mac & Cheese Pizza

Ingredients

  • 2 cups milk
  • 8 ounces cream cheese, diced
  • 3 ounces Velveeta cheese, diced
  • 2 cups shredded monterey jack cheese, plus 1 cup
  • 2 cups shredded sharp cheddar cheese, plus 1 cup
  • 1 lb elbow macaroni, cooked for 6 minutes, drained and rinsed with cool water
  • 1 cup marinara sauce
  • 1/2 red onion, sliced into 1/2 moon strips
  • 1/2 red bell pepper, cut into julienne strips
  • 1/2 green bell pepper, cut into julienne strips
  • 2 ounces mini pepperoni
  • 1 cup panko breadcrumbs
  • 3 tablespoons olive oil
  • 1 1/2 teaspoons italian seasoning
  • kosher salt
  • ground black pepper

Method

  1. Set your oven to heat to 450 degrees. Place the milk, cream cheese and Velveeta into a large pot and warm them. Keep stirring until the cheeses have fully melted and the mixture begins to simmer, then whisk in 2 cups of the monterey jack and 2 cups of the cheddar until they melt into the sauce.
  2. Gently mix the cooked macaroni and the marinara sauce into the prepared cheese sauce until everything is well coated. Add salt and pepper as needed. Transfer this mixture to a baking sheet, spreading it out evenly. Scatter the remaining 1 cup of monterey jack, 1 cup of cheddar, the onion slices, and the red and green pepper strips over the top, followed by the mini pepperoni.
  3. Take a medium bowl and combine the panko breadcrumbs with the olive oil and Italian seasoning, seasoning with salt and pepper. Sprinkle this mixture evenly over the assembled macaroni and cheese. Place the sheet pan in the oven and bake for about 15-20 minutes, until the top is crisp and the cheese is fully melted and bubbly.
