Spicy Cumin Almonds
This recipe creates a batch of savoury and spicy almonds, perfect for sharing. Whole almonds are first toasted in the oven to bring out their nutty flavour. They are then coated in a warm mixture of melted butter, brown sugar, Worcestershire sauce, and spices including cumin, coriander, cayenne, and salt. Once tossed and cooled completely, the nuts become a deliciously crunchy snack ideal for storing.
Ingredients
- 6 cups almonds, whole, unblanched
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 3 tablespoons brown sugar
- 1 1/2 teaspoons Worcestershire sauce
- 3/4 teaspoon cayenne pepper (or a bit more, to taste)
- 1 1/2 teaspoons salt
Method
- Toast the almonds in an oven set to 325° for 10-15 minutes, remembering to shake them a few times.
- While the nuts toast, combine all the remaining ingredients in a small saucepan placed over a low heat.
- Stir the mixture gently until the butter has fully melted and the sugar is dissolved.
- Transfer the toasted almonds into a mixing bowl and pour the warm, spiced butter over them.
- Toss the nuts thoroughly to ensure they are evenly coated in the mixture.
- Allow the almonds to cool down completely.
- Keep the finished nuts in an airtight container for storage.
