Spicy Cucumber Blueberry Salad
This refreshing salad pairs cool, crisp cucumber with juicy blueberries for a surprising combination. A lively dressing of fresh lime juice, finely chopped jalapeno, garlic and ground cumin brings a gentle heat and aromatic depth. Tossed with fresh coriander leaves, it creates a colourful and flavourful side dish that is quick to assemble, perfect for a light lunch or accompaniment.
Ingredients
- 2 lbs cucumbers, seedless, halved lengthwise
- salt
- 1 jalapeno, chopped fine
- 4 teaspoons lime juice
- 1 garlic clove, chopped fine
- 1/4 teaspoon cumin powder
- 1/4 cup olive oil
- 1 1/2 pints blueberries
- 1 cup cilantro leaf, chopped
Method
- Slice the cucumbers into half moons roughly 1/8 inch thick using a handheld slicer. Sprinkle them with salt.
- Place the chopped jalapeno, lime juice, garlic and cumin powder into a large mixing bowl. Whisk the olive oil into this mixture.
- Add the salted cucumber slices, fresh blueberries and chopped coriander leaves to the bowl. Toss everything together until evenly coated.
