This is a spiced cranberry sauce recipe adapted for a diabetic diet, using Splenda as a sugar substitute. It combines fresh cranberries with orange juice, zest, and pieces of fresh ginger, simmered until the berries burst. Warm spices like cinnamon, cloves, and allspice are stirred in after cooking. The flavours develop best when made several days in advance. The recipe yields approximately 3 cups and takes about 20 minutes of active cooking time.

Splenda Cranberry Sauce

Ingredients

  • 4 cups fresh cranberries, picked over & rinsed
  • 2 cups Splenda sugar substitute or 2 cups sugar
  • 6 tablespoons water
  • 6 tablespoons fresh orange juice
  • 1/4 teaspoon salt
  • 2 inches fresh ginger, peeled & cut in 3 pieces (if you don't have fresh ginger, add 1/2 tsp ground ginger with other spices)
  • 1 orange, zest of
  • 1 teaspoon cinnamon
  • 1/8 teaspoon ground cloves
  • 1/2 teaspoon allspice

Method

  1. Combine the cranberries, Splenda or sugar, water, orange juice, salt, fresh ginger pieces, and orange zest in a large cooking pot.
  2. Bring the mixture to a boil and continue cooking for about 10 minutes, until every cranberry has popped open.
  3. Take the pot off the heat and let the sauce cool for 1/2 hour.
  4. Take out the pieces of ginger, then stir in the cinnamon, ground cloves, and allspice.
  5. Mix everything together well and leave the sauce to cool down fully.
  6. Transfer the sauce to a bowl with a lid and place it in the refrigerator until you need it.
