This simple assembly combines shredded chicken with black beans, spicy salsa, pickled jalapeños, fresh tomatoes and rocket. The tortilla is warmed briefly to make it pliable before rolling everything into a tight, portable package. It's a perfect solution for a speedy and satisfying meal on the go.

Spicy Chicken and Bean Wrap

Ingredients

  • 1 large flour tortilla wrap (look for Mission Deli wraps)
  • handful leftover chicken shredded
  • 4 tbsp drained black beans or kidney beans
  • 4 slices pickled jalapeño pepper (or a good splash Tabasco)
  • 3 cherry tomatoes halved
  • handful rocket or spinach leaves
  • 2 tbsp spicy salsa from a jar

Method

  1. 1. Soften the tortilla by warming it in the microwave for 10 secs. Arrange the shredded chicken and beans in a line down the centre. 2. Add seasoning, then spoon the salsa over and top with the jalapeño peppers or Tabasco. Place the tomato halves and rocket leaves on top. 3. Fold the bottom edge of the tortilla up and over the filling. Tuck in the sides, then roll it up firmly into a wrap. Pack it tightly to help it hold its shape.
