Chicken Quesadillas
These chicken quesadillas are a speedy and low-fat dinner option. The recipe uses cooked chicken breast, shredded cheddar cheese and sliced green onions layered between tortillas. They are toasted in a pan until crisp and golden brown, then sliced and served with salsa. You can add rice or sour cream for dipping if you like.
Ingredients
- 4 tortillas
- 1/2 cup shredded cheddar cheese
- 1 cooked chicken breast, chopped (cooked without skin)
- 2 green onions, sliced

Method
- Put one tortilla into a frying pan that has been coated with cooking spray.
- Add one tablespoon of salsa to the tortilla and spread it across the surface, using a modest amount.
- Arrange half of the shredded cheese, chopped chicken and sliced green onions over the salsa.
- Top the filling with a second tortilla and lightly spray its surface with cooking spray.
- Cook the quesadilla until it turns a golden brown colour, then carefully flip it to brown the opposite side.
- Use the remaining tortillas and ingredients to assemble and cook a second quesadilla.
- Cut each cooked quesadilla into wedges, like slices of pie.
- Present the wedges with extra salsa for dipping.
