Red Jalapeno Relish
This vibrant relish combines chopped plum tomatoes with finely diced red onion and spicy red jalapeños from a jar. A base of tomato purée, red wine vinegar, and honey is mixed with the tomato juices, then everything is stirred together with ground coriander seeds. After a brief rest, you can adjust the heat level to your preference. It's a quick, flavourful condiment ideal for spooning over loaded nachos or alongside your favourite Mexican meals.
Ingredients
- 4-5 big plum tomatoes roughly chopped
- 1 tbsp tomato purée
- 1 tbsp red wine vinegar
- 1 tsp honey
- 1small red onion finely chopped
- 75-100g red jalapeños from a jar, finely chopped, plus a few extra to decorate
- 1/2 tsp coriander seeds ground with a pestle and mortar
Method
- Place the chopped tomatoes in a sieve suspended over a mixing bowl for 5 mins. Remove the sieve and combine the tomato purée, vinegar, and honey with the collected tomato juices to create a smooth mixture. Add the tomatoes, onion, 75g of chopped jalapeños, and the ground coriander seeds, seasoning to taste.
- Allow the mixture to stand for 5 mins, then sample it to check the spice level. For more heat, incorporate the remaining 25g of jalapeños. Garnish with a few whole jalapeños before serving.
