Spicy Chicken and Ham Spread
This savoury spread blends finely processed cooked chicken and ham with sweet pickle and lemon rind. The mixture is combined with softened butter, nutmeg, salt, pepper and Tabasco sauce for a spicy note. After chilling to firm up, it makes an excellent topping for thin rye bread rounds or your favourite crackers. It's a simple yet tasty option for gatherings.
Ingredients
- 1 cup chopped cooked chicken
- 1 cup chopped cooked ham
- 1 tablespoon chopped sweet pickle
- 1 tablespoon grated lemon rind
- 4 tablespoons butter, softened
- 1/8 teaspoon grated nutmeg
- salt
- fresh ground black pepper
- Tabasco sauce
Method
- Place the chicken, ham, pickle and lemon rind into a food processor and process until nearly a puree.
- Transfer the mixture to a bowl and incorporate the butter, nutmeg, salt, pepper and Tabasco, mixing thoroughly until smooth.
- Cover the bowl with plastic wrap and refrigerate the spread for about 30 minutes.
- Present the spread on thin slices of rye bread or with crackers.
