Spicy Cherry and Apple Chutney
This chutney recipe is a slight adaptation of one originally from a fruit company's website. It combines canned dark sweet cherries with diced tart apple, simmered in a mixture of vinegar, brown sugar, and spices including ginger and garlic. An optional pinch of crushed red chilli adds a gentle heat. The mixture cooks down until nicely thickened, resulting in about one cup of chutney that can be served either warm or chilled alongside various meats.
Ingredients
- 1 (15 ounce) can dark sweet cherries, drained
- 1 large tart apple, pared, cored, diced
- 3/4 cup vinegar
- 3/4 cup brown sugar, packed
- 1 teaspoon salt
- 1 teaspoon ground ginger
- 1 1/2 teaspoons fresh garlic, minced
- 1/4 teaspoon red chile, crushed (optional)
Method
- Place all the listed ingredients into a medium sized heavy based saucepan.
- Bring the mixture up to a rolling boil.
- Lower the heat and allow the chutney to simmer gently for 20 to 30 minutes, until it reaches a thickened consistency.
- This chutney can be enjoyed either hot or cold, particularly with meat dishes. Store any remaining chutney in the refrigerator.
