This chutney recipe is a slight adaptation of one originally from a fruit company's website. It combines canned dark sweet cherries with diced tart apple, simmered in a mixture of vinegar, brown sugar, and spices including ginger and garlic. An optional pinch of crushed red chilli adds a gentle heat. The mixture cooks down until nicely thickened, resulting in about one cup of chutney that can be served either warm or chilled alongside various meats.

Spicy Cherry and Apple Chutney

Ingredients

  • 1 (15 ounce) can dark sweet cherries, drained
  • 1 large tart apple, pared, cored, diced
  • 3/4 cup vinegar
  • 3/4 cup brown sugar, packed
  • 1 teaspoon salt
  • 1 teaspoon ground ginger
  • 1 1/2 teaspoons fresh garlic, minced
  • 1/4 teaspoon red chile, crushed (optional)

Method

  1. Place all the listed ingredients into a medium sized heavy based saucepan.
  2. Bring the mixture up to a rolling boil.
  3. Lower the heat and allow the chutney to simmer gently for 20 to 30 minutes, until it reaches a thickened consistency.
  4. This chutney can be enjoyed either hot or cold, particularly with meat dishes. Store any remaining chutney in the refrigerator.
