Spicy Cajun Boiled Peanuts
This recipe guides you through preparing a large batch of spicy boiled peanuts. Raw peanuts in their shells are cleaned and simmered for several hours with a blend of salt, red pepper flakes, Cajun seasoning, and hot sauce. Ingredients
- 2 lbs raw virginia peanuts, in shell
- 1/2 cup kosher salt
- 1/4 cup crushed red pepper flakes
- 1/4 cup cajun seasoning
- 2 tablespoons hot sauce
Method
- Clean the raw peanuts in their shells by washing them.
- Submerge the peanuts in water and allow them to soak for 45 minutes to help remove dirt.
- Pour off the soaking water and give the peanuts a thorough rinse under cold water.
- Transfer the peanuts to a 12-quart Dutch oven along with the salt and all the other seasonings.
- Pour in 1 3/4 gallon of water and mix everything together.
- Put the lid on the pot and bring the contents to a boil, then reduce the heat and let it simmer for 4-6 hours until the peanuts are tender, resembling the texture of cooked pinto beans.
- Drain the cooked peanuts. For storage, place them in zip-lock bags and refrigerate for up to 2 weeks, or freeze in freezer bags for up to 2 months.
