Spicy Cabbage Relish
This quick relish combines finely shredded cabbage with green pepper, onion, and tomatoes for a fresh base. A tangy mixture of wine vinegar, mustard, Worcestershire, and hot sauce adds a spicy kick. Ingredients
- 4 teaspoons butter or 4 teaspoons margarine
- 2 cups finely shredded cabbage
- 1 medium green pepper, chopped
- 1 small onion, chopped
- 2 medium tomatoes, chopped
- 2 tablespoons wine vinegar
- 2 teaspoons prepared mustard
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/4 teaspoon hot sauce
- 1/8 teaspoon pepper
Method
- Put the butter or margarine into a 2 quart glass casserole dish. Microwave it on high until melted, which should take about 45 seconds.
- Mix all the other ingredients into the melted butter until well combined. Cover the dish and microwave on high for 7 to 9 minutes, remembering to stir the mixture after 4 minutes. Serve it hot over veggie dogs. Any leftovers should be refrigerated and can be used either hot or cold.
