Grilled Herbed Shrimp on Mixed Greens
Perfect for a warm evening, this dish features shrimp marinated in a herbed garlic dressing and grilled, then served atop a fresh salad. The recipe is adaptable, allowing you to customise the salad components to your preference. It offers a quick cooking option using a grill or a broiler. Ingredients
- 1/2 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1 teaspoon dried basil leaves
- 1/2 teaspoon dried oregano leaves
- 1/8 teaspoon salt
- 2 cloves garlic, minced
- 1 lb shelled deveined uncooked large shrimp
- 1 (10 ounce) package mixed salad greens
- 1/2 yellow bell pepper, cut into bite sized strips
- 1/2 cup sliced halved cucumber
- 1/2 cup sliced radish
- 1/2 cup shredded or shaved fresh parmesan cheese
Method
- Prepare the grill for cooking.
- Whisk together the olive oil, red wine vinegar, dried basil, dried oregano, salt and minced garlic in a bowl until well combined.
- Set aside half of this mixture to dress the salad later. Place the shrimp in the other half, coating them evenly, and leave to marinate for 10 minutes.
- Take the shrimp out of the marinade, keeping the liquid. Thread them onto four 12-inch metal skewers and grill for 6-8 minutes until pink, turning once and basting with the reserved marinade.
- Toss the mixed greens, yellow bell pepper strips, cucumber slices, radish slices and parmesan cheese with the reserved dressing in a large bowl.
- Place the tossed salad onto plates and arrange the grilled shrimp on top.
