Grilled Herbed Shrimp on Mixed Greens

Ingredients

  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon dried basil leaves
  • 1/2 teaspoon dried oregano leaves
  • 1/8 teaspoon salt
  • 2 cloves garlic, minced
  • 1 lb shelled deveined uncooked large shrimp
  • 1 (10 ounce) package mixed salad greens
  • 1/2 yellow bell pepper, cut into bite sized strips
  • 1/2 cup sliced halved cucumber
  • 1/2 cup sliced radish
  • 1/2 cup shredded or shaved fresh parmesan cheese

Method

  1. Prepare the grill for cooking.
  2. Whisk together the olive oil, red wine vinegar, dried basil, dried oregano, salt and minced garlic in a bowl until well combined.
  3. Set aside half of this mixture to dress the salad later. Place the shrimp in the other half, coating them evenly, and leave to marinate for 10 minutes.
  4. Take the shrimp out of the marinade, keeping the liquid. Thread them onto four 12-inch metal skewers and grill for 6-8 minutes until pink, turning once and basting with the reserved marinade.
  5. Toss the mixed greens, yellow bell pepper strips, cucumber slices, radish slices and parmesan cheese with the reserved dressing in a large bowl.
  6. Place the tossed salad onto plates and arrange the grilled shrimp on top.
