Fat-Free Cabbage-Rice Casserole
This satisfying casserole is a fat-free meal option, with the exception of optional Parmesan cheese. It combines sliced cabbage, uncooked rice, and a mix of vegetables like onion, carrots, and green pepper. The ingredients are baked together in a tomato-based sauce flavoured with brown sugar, vinegar, and Dijon mustard. The result is a tender, flavourful dish that serves eight people. You can customise it with a sprinkle of cheese or add dried chilli flakes for a spicy kick.
Ingredients
- 1 medium onion, chopped
- 1 -2 tablespoon fresh minced garlic
- 7 cups cabbage, sliced (about 1/2 head)
- 3 large carrots (peeled and thinly sliced)
- 1 large green bell pepper, seeded and coarsley chopped
- 1 1/2 cups uncooked rice
- 2 (28 ounce) cans diced tomatoes (including the juice, do not drain)
- 1 cup tomato juice
- 1/2 cup brown sugar (or to taste)
- 1/2 cup white vinegar
- salt and pepper
- 1 -2 teaspoon Dijon mustard
- 4 -6 whole tomatoes, chopped (optional)
Method
- Preheat your oven to 350 degrees.
- Lightly grease a large casserole dish with a capacity of at least 16 cups, or prepare two smaller dishes.
- Arrange the chopped onion and minced garlic across the base of the greased dish.
- Slice the cabbage with a knife or food processor to yield approximately 7 cups.
- Combine all the chopped vegetables and the uncooked rice in a large mixing bowl.
- In a separate bowl, mix the canned diced tomatoes with their juice, 1 cup tomato juice, sugar, vinegar, salt, pepper and Dijon mustard thoroughly.
- Fold this tomato mixture into the bowl of cabbage and rice until everything is evenly coated.
- Pour the combined mixture over the onions in the casserole dish without stirring, then cover it with a lid.
- Bake for 1-1/2 hours, stirring the contents well every half an hour, until the cabbage is soft and the rice is cooked.
- If using, stir the chopped fresh tomatoes into the baked casserole.
- For a cheesy topping, you may optionally sprinkle 1/4 cup grated Parmesan cheese over the casserole before baking.
