This traditional preparation of French-style peas uses lettuce leaves to steam the peas gently, resulting in a tender and subtly flavoured vegetable side. Ingredients

  • 3 -4 large outer lettuce leaves
  • 1 (10 ounce) package frozen peas
  • 1/4 teaspoon salt
  • 1 tablespoon margarine

Method

  1. Arrange the large outer lettuce leaves to cover the base and inner sides of your pan, saving one leaf.
  2. Add the frozen peas, 1/4 teaspoon salt, and 1 tablespoon margarine into the pan, then place the saved lettuce leaf on top.
  3. Put the lid on the pan and allow the contents to simmer for 10-15 minutes.
  4. Take off the lettuce leaves before you dish up the peas.
